Have you ever eaten the WHOLE cocoa beans? They are such a delicious snack, squeeze a bit, rub off the shell, and put the whole bean in your mouth and ENJOY!
Chiang Mai beans have a plenty of umami (taste), nuttiness and floral notes. They are probably one of the healthiest snacks you can nibble on. My mother likes to dip them into raw honey. When you eat the beans with something sweet, it will enhance the chocolatey flavor inside the beans!
Watch out for the hard radicles in the bean. If you are bored, you can collect them for no reason! hahaha
And the husks - don't throw them away, collect them and steep tea of out them.
