Sugar-free, low-carb, dark milk chocolate + kombucha-fermented, organic cashew nuts

The cashew nuts are slightly salty and sour because they had been fermented in home-fermented organic kombucha for 3-5 days. Kombucha creates some umami inside thanks to all the organic acids created in the fermentation process. They were then dehydrated and slightly roasted, then coated with our organic sugar-free darkest milk chocolate, which we made from scratch, using cocoa beans we roasted, ground and refined together with grass-fed milk powder, organic cocoa butter, non-GMO sunflower lecithin and low carb sweeteners.

 

It is not sweet - sweeteners are sugar-equivalent of 83% chocolate, plus it has some sweetness from milk powder. Cocoa contents are 56%. This is the first milk chocolate we made but it is VERY DARK. We love it. The beans come from Lachua, Guatemala, which have bright fruits notes, which have been smoothened by adding some milk in the recipe.

The chocolate is only sweetened with erythritol, inulin and organic monk fruit to keep it as low carb as possible. 

If you want the vegan version, choose this one instead, it is made of dark chocolate without any animal products.

About our chocolate

Our chocolate is NOT made from melting mass-produced chocolate. Rather, we make it from scratch by using quality certified organic cocoa beans from various origins. The beans are hand-sorted, roasted (to bring out the best flavors and aromas), ground & refined (to create the smooth texture and mouthfeel).

We only use cocoa beans, cocoa butter, sweeteners and non-GMO cold-pressed sunflower lecithin (you can read about it here - it is a great nutritional supplement for your brain!) from Europe. 

Milk powder we use for this dark milk chocolate is from New Zealand, where it was made from grass-fed cows without the use of antibiotics and hormones.

This product contains tree nuts and cow milk. Keep them cool in the fridge. Best consumed within a month after purchase.
