We love our organic masala chai spice mix. which is 100% natural, and certified organic from Sri Lanka (except long pepper and ginger, which we source from Thailand). No artificial flavors, no sugar/sweetness.

Masala Chai spice contains several spices which have a number of health benefits. In the U.S., it is widely available as a syrup concentrate—common in coffeehouses—and as a tea "blend" with dried spices, but it rarely made from scratch.

This is OUR favourite mixture of spices in a special proportion. If you like certain taste stronger (for example, we add a slice of fresh ginger when we brew tea with it, and sprinkle cinnamon at the end as well), you can just add extra spices of your choice, such as star anise, fennel and so on.

How to make chai tea

  • 1/2 teaspoon of masala chai spice
  • 1/2 cup water
  • 1/2 cup milk of choice (coconut milk is lovely)
  • 2 teaspoons black tea, such as Ceylon (we stock organic Ceylon tea now!)
  • Sweetener of choice to taste
  1. Bring the water, milk, spice mixture, and tea to a slow simmer. Cover and remove from the heat. Allow to steep for 5 minutes.
  2. Strain carefully into a cup and sweeten to taste

I have also used this spice mixture to give flavour to desserts, or in morning smoothies. It's such a fragrant mix and really gives a lift to any recipe.

How to brew Chai kombucha

In order to sustain the health of the SCOBY, we suggest you add the spice mix during the secondary fermentation for a few day. You can try with a teaspoon of spice to 2 cups of kombucha, and increase or decrease it, depending on your taste. The SCOBY would not like the oil from the spices, so we would not recommend to use chai spice during the first fermentation with the SCOBY.
